cheese board dinner

ingredients
ritz crackers or loaf of french bread
salami or meat sticks or sliced deli meat
slices of cheese
mini pickles
dried fruit (cranberries, cherries, raisins, etc.)
baby carrots
fruit (berries, grapes, apples, etc.)
cucumbers
bell peppers
pretzels
hummus
olives

directions

  1. slice, cut up, and lay out ingredients on a cutting board and enjoy eating with your fingers !

i (and every other parent on this planet during this pandemic, especially) needed a simple and easy dinner to throw together at least one day out of the week and so i thought i’d add this to my collection of recipes since i’ll probably be using this at least a couple times a month (maybe more) now that the weather is getting warmer and i don’t feel like firing up the stove or oven or rice cooker or instapot or crock pot, etc. etc. etc. plus, minimal clean up is also very attractive about this particular recipe and we could eat this outside as a picnic when the weather is nice, so double bonus !

i wanted to have a record of things to include on the cheese board, so here it is: easy dinner with easy clean-up and little prep and healthy too !

my kids really liked using the crackers, cheese, and salami to make mini sandwiches. they also really liked the mini pickles too: whaddya know? they really are my kids =]
