fluffy pancakes

makes about 15-20 pancakes
ingredients
2 1/4 c milk
6 T vinegar
3 c all-purpose flour
6 T sugar
1 T baking powder
1.5 tsp baking soda
1.5 tsp salt
3 eggs
6 T butter, melted
oil
directions
- combine milk with vinegar in a medium bowl and set aside for 5 minutes to sour.
- combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. whisk egg and butter into soured milk.
- pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- heat a large skillet over medium heat and use oil to coat.
- pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface.
- flip with a spatula and cook until browned on the other side.
mini cinnamon rolls

makes about 2 dozen rolls
ingredients
4 (8 oz.) cans refrigerated crescent rolls
1/4 c melted butter
1/4 c sugar
1 tsp cinnamon
1 c powdered sugar
1 tsp milk
directions
- preheat oven to 350 degrees.
- sprinkle flour on the surface you’re going to be working on.
- open rolls and roll dough out, pressing the perforations together.
- spread the butter over the dough.
- mix cinnamon and sugar and sprinkle evenly over the dough.
- roll the dough up from the short end and then slice into 1 inch slices.
- place slices on a cookie sheet about 2 inches apart and bake for 13-15 minutes or until golden brown.
- mix the powdered sugar and milk to make a glaze and drizzle on top of warm rolls.
- enjoy !
