fluffy pancakes

total time: 25 minutes
makes about 15-20 pancakes

ingredients
2 1/4 c milk
6 T vinegar
3 c all-purpose flour
6 T sugar
1 T baking powder
1.5 tsp baking soda
1.5 tsp salt
3 eggs
6 T butter, melted
oil

directions

  1. combine milk with vinegar in a medium bowl and set aside for 5 minutes to sour.
  2. combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. whisk egg and butter into soured milk.
  3. pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  4. heat a large skillet over medium heat and use oil to coat.
  5. pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface.
  6. flip with a spatula and cook until browned on the other side.

mini cinnamon rolls

cook time: 13-15 minutes
total time: 35 minutes
makes about 2 dozen rolls

ingredients
4 (8 oz.) cans refrigerated crescent rolls
1/4 c melted butter
1/4 c sugar
1 tsp cinnamon
1 c powdered sugar
1 tsp milk

directions

  1. preheat oven to 350 degrees.
  2. sprinkle flour on the surface you’re going to be working on.
  3. open rolls and roll dough out, pressing the perforations together.
  4. spread the butter over the dough.
  5. mix cinnamon and sugar and sprinkle evenly over the dough.
  6. roll the dough up from the short end and then slice into 1 inch slices.
  7. place slices on a cookie sheet about 2 inches apart and bake for 13-15 minutes or until golden brown.
  8. mix the powdered sugar and milk to make a glaze and drizzle on top of warm rolls.
  9. enjoy !
