6 c low-sodium chicken broth
4 boneless, skinless chicken breasts (about 2 lbs)
2 15-oz. cans black beans, drained and rinsed
1 15-oz. can diced tomatoes
1 15-oz. can corn
1 red bell pepper, chopped
1 onion, chopped
1 jalapeno, seeded and finely chopped, plus sliced for serving
2 T ground cumin
2 T chili powder
1 tsp kosher salt
1/2 tsp black pepper
3 T fresh lime juice (from 1 lime)
shredded cheese, sour cream, and hot sauce, for serving


  1. combine broth, chicken, beans, tomatoes, corn, bell pepper, onion, chopped jalapeno, cumin, chili powder, salt, and pepper in a 4-6 quart slow cooker.
  2. cover and cook on low until chicken is very tender, 6-8 hours.
  3. remove chicken and, using 2 forks, shred into bite-size pieces.
  4. stir chicken and lime juice into soup and serve topped with cheese, sour cream, hot sauce, and sliced jalapeno.

homemade taco seasoning

prep time: 5 minutes       cook time: 10 minutes        total time: 15 minutes

1 tsp chili powder
1/4 tsp garlic powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper


  1. in a small bowl, mix together all dry ingredients. (if so desired, store in an airtight container.) set aside.
  2. cut up half of an onion, diced. cook the onion in a pan for about 5 minutes or until golden.
  3. add 1 pound of ground beef in pan and crumble.
  4. sprinkle the taco seasoning over meat just as its finished cooking.

Taco Meat

Prep Time: 5 minutes          Total Time: 15 minutes           Servings: 4-6

1 lb ground beef
1/4 cup flour
1 T chili powder
1 tsp salt
1 T taco seasoning (hot and spicy) – use crushed red peppers if no taco seasoning available
half an onion, diced or minced
3 cloves garlic, minced
1/8 tsp cumin
1/2 c water


  1. Put garlic and onions into pan and cook until golden brown.
  2. Then mix in ground beef.  Stir occasionally breaking up any large chunks.
  3. Mix dry ingredients in a separate bowl.
  4. Pour dry ingredients in with ground beef.
  5. Then add water and cook for 5-10 minutes or until done.
