coconut tapioca dessert

ingredients
1 13.5 oz can coconut milk
1.5 c milk
1/3 c sweetened condensed milk
1/2 tsp vanilla extract
1/2 c mini pearl tapioca (90 grams)
1/2 c fresh strawberries, sliced (or fresh fruit of your choice – blueberries, raspberries, blackberries)

directions

  1. add the coconut milk, milk, sweetened condensed milk, and vanilla extract to a small pot. stir and bring to a boil – watch it closely so the liquid doesn’t boil over. once it boils, immediately take it off the heat. let the mixture cool slightly, and put it in the refrigerator to chill. (this step can be done ahead of time.)
  2. in a pot, bring 4 cups of water to a boil. add the mini pearl tapioca (don’t add these before the water is at a full boil !) stir and bring it to a boil again. turn off the heat, cover it with a lid, and set your timer for 18 minutes. after 18 minutes have elapsed, the pearl tapioca should turn completely transparent, which means they’re fully cooked. strain the pearls, rinse them with cold water to prevent them from sticking, and set aside.
  3. divide the prepared coconut milk soup into bowls, then divide the pearl tapioca. top with your fresh fruit and serve !

strawberry cake cookies

prep time: 20 minutes       bake time: 12 minutes       total time: 35 minutes       makes about 50 cookies

ingredients
1 box of strawberry cake mix (or red velvet, if you prefer)
1 box of 8 oz. cream cheese, softened
1 stick of butter, softened
1 egg
1 tsp vanilla
6-7 tsp powdered sugar

directions

  1. mix cream cheese and butter until well blended.
  2. beat in the egg.
  3. add vanilla and cake mix.
  4. cover and chill for 2 hours (or put them in the freezer for about 20 minutes).
  5. roll into 1 1/4 inch balls, then roll in powdered sugar.
  6. place on cookie sheet about 1 inch apart. (they will spread, the bigger you make the balls.)
  7. bake at 350 degrees for 12 minutes. (don’t worry, they will be soft – that’s what makes them good !)

ingredients
3/4 c sugar
5 large lemons, thinly sliced
16 oz. strawberries
1 lime, thinly sliced

directions

  1. in a large pot, combine sugar, strawberries, lemons and lime.
  2. mash with a potato masher for 5 minutes.
  3. stir in 6 cups water and let sit 15 minutes.
  4. pour through a fine-mesh sieve into a large container, pressing on solids to extract as much liquid as possible.
  5. discard lemons and lime.
  6. serve over ice if desired.
