6 c low-sodium chicken broth
4 boneless, skinless chicken breasts (about 2 lbs)
2 15-oz. cans black beans, drained and rinsed
1 15-oz. can diced tomatoes
1 15-oz. can corn
1 red bell pepper, chopped
1 onion, chopped
1 jalapeno, seeded and finely chopped, plus sliced for serving
2 T ground cumin
2 T chili powder
1 tsp kosher salt
1/2 tsp black pepper
3 T fresh lime juice (from 1 lime)
shredded cheese, sour cream, and hot sauce, for serving


  1. combine broth, chicken, beans, tomatoes, corn, bell pepper, onion, chopped jalapeno, cumin, chili powder, salt, and pepper in a 4-6 quart slow cooker.
  2. cover and cook on low until chicken is very tender, 6-8 hours.
  3. remove chicken and, using 2 forks, shred into bite-size pieces.
  4. stir chicken and lime juice into soup and serve topped with cheese, sour cream, hot sauce, and sliced jalapeno.

crock pot macaroni and cheese

yields 4-6 servings       total time: 2 hours 20 minutes

2 c uncooked elbow macaroni
4 T butter (1/2 stick)
2 1/2 c grated sharp cheddar cheese (use freshly grated cheese, not pre-packaged shredded kind)
2 eggs
1/2 c sour cream
1 (10.75 oz) can condensed cheddar cheese soup
1/2 tsp salt
1 c whole milk
1/2 tsp dry mustard
1/2 tsp black pepper


  1. boil the macaroni in water for six minutes. drain.
  2. in a medium saucepan, mix butter and cheese. stir until the cheese melts.
  3. whisk the eggs, sour cream, soup, salt, milk, mustard and pepper in a separate bowl.
  4. spray the inside of the slow cooker lightly with some pam.
  5. in slow cooker, add the cheese mixture, then the egg mixture.
  6. add the drained macaroni and stir.
  7. cook on low for 2 hours, stirring occasionally.

crock pot adventures

lately, i’ve been trying out some slow cooker recipes. the few that i’ve tried out have been pretty successful… just have to tweak them a little here and there. i’ve never really cooked much with larger pieces of meat: i’ve cooked with ground beef, smaller pieces of beef/pork when stir-frying, fish (mostly tilapia), but never really felt comfortable with chicken/steak type dishes. i’ve always stuck mainly with pasta and rice dishes.

i think cooking chicken in a crock pot has given me a little more courage to try something i haven’t done much of.
