okra with tomatoes

prep time: 15 minutes cook time: 15 minutes makes 6 servings
ingredients
1 tsp olive oil
3 cloves garlic, minced
1 small onion, chopped
2 tsp cayenne pepper
1 green bell pepper, chopped
1 lb sliced okra
1 – 8 oz. can of canned diced tomatoes (or fresh tomatoes can be substituted)
1 – 15 oz. can of stewed tomatoes
salt & pepper to taste
directions
- cover bottom of skillet with olive oil and place over medium heat.
- add garlic, onion, cayenne pepper in the skillet and stir until fragrant.
- stir in green pepper. cook and stir until tender, about 5 minutes.
- stir in okra and allow to cook for 5 minutes more.
- stir in both the diced and stewed tomatoes.
- season with salt and pepper.
- reduce heat to medium-low and simmer until all vegetables are tender, about 5-7 minutes.
