kiddie recipes

i forgot about these recipes because i had published them to a private blog, but i wanted to make it more accessible to myself (and others who are interested), so i decided to copy them here too.

i found this great recipe for homemade applesauce. in case the link isn’t working (or doesn’t work in the future), here it is:homemade-applesauce-3

homemade applesauce

prep time: 15 min.     cook time: 25 minutes     servings: 12

6 lbs. apples, peeled, cored, and cut into quarters
1 c apple juice or apple cider
juice of 1 lemon
1/2 c brown sugar, packed
1 tsp cinnamon, or more to taste
optional ingredients: nutmeg, allspice, butter

  1. combine all ingredients in a large pot and cook over medium heat, stirring occasionally, for 25 minutes.
  2. carefully puree in a food processor or blender until smooth. don’t worry if you think you’ve blended it too much; it will thicken in the refrigerator. what i usually do is pour half into the blender and puree until smooth. then the other half, i’ll blend it less, so it’s more chunky and then mix the smooth and chunky together.
  3. store in the fridge and serve !

i’ve made this several times and the last time, it was too watery, so it was more apple soup than applesauce. but it’s very tasty; a lot more tastier than store-bought applesauce. the combination of spices does the trick. plus, it makes your home smell so warm and cozy !

i tried this recipe a while ago and it turned out pretty well. they are healthy mini toddler muffins. the recipe is below.dsc_5810

healthy mini toddler muffins

prep: 15 min.     bake time: 45 min.     servings: about 30 muffins

6 T butter, softened
1/4 c brown sugar
2 large bananas, mashed
1/2 c applesauce (any pureed fruit or sweet veggie, like baby food, will work fine) – i used 7 defrosted cubes of pureed pears
1 large carrot (or 6-7 baby carrots), grated
2 eggs
1 c all-purpose flour
1/2 c oats (or oatmeal)
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
(could also add 1 tsp vanilla; 1/2 cup craisins, chopped; 1/2 cup nuts of your choice)

  1. preheat the oven to 375 degrees. grease mini muffins pan. (i only had one 12 count mini muffin pan which worked fine.)
  2. in a mixing bowl, cream together the butter and brown sugar until smooth. mix in the mashed bananas, applesauce/veggie/pureed food, carrot, and eggs. stir in the flour, oats, baking soda, spices, and salt until just combined.
  3. using an ice cream scoop, spoon the batter equally into the prepared muffin cups.
  4. bake for 15 minutes or until a toothpick inserted into the center comes out clean. cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  5. store at room temperature for up to two days or freeze.

i actually skipped the mashed bananas altogether and just added a little more pureed cubes. and these aren’t strictly for toddlers either… it’s kind of dangerous that they are bite-sized because i liked to sneak a few here and there as i walk pass them. they really are kind of addicting and it’s so nice that they are healthier for you than sweets or muffins you get from the store =] i like to make big batches of these and freeze them too !
