seven layer salad

makes 8 servings       total time: 30 minutesseven layer salad

ingredients
5 c shredded romaine lettuce
1 3-oz. package of ramen noodles, lightly crushed
11 oz. can white shoepeg corn (regular canned corn works too)
1 large tomato, chopped
1 green onion, sliced
1/2 c sliced almonds

for dressing:
1/4 c oil (meausre this first !)
2 T vinegar
3 T sugar
2 tsp salt
1 tsp pepper
1.5 tsp grated ginger

directions

  1. arrange lettuce in bottom of large (3-quart) clear glass serving bowl.
  2. discard seasoning packet from ramen noodles.
  3. crush noodles and layer over romain.
  4. layer the remaining salad ingredients, in order listed, over romain.
  5. in a small jar or container with tight lid, combine all dressing ingredients. shake or stir until well blended.
  6. pour dressing over salad and serve immediately.

i’ve been wanting to make this for a while now… especially with the weather as warm as it is. this is a very refreshing salad to eat on a nice summer evening. i had all the ingredients for it, but then i used a few for another recipe. i finally got to make it yesterday before i could steal the ingredients again 🙂

i literally could’ve probably sat down and eaten the whole salad by myself. i’m very much a salad person and the dressing has such a unique blend of flavors that i would’ve gobbled it right up. i usually don’t like sweet sauces, but the combination of these spices works. and it’s so easy to make too. the ramen noodles and corn give it some texture and the ginger gives it a little bite. yum !

i omitted the chicken completely and the salad tasted fine without it. you could probably use any type of nut; instead of peanuts, like the recipe suggests, i used almonds instead.

i’m sure i’ll be making this more often as the summer goes on. definitely !
