easy as baked tilapia

prep time:  5 minutes      cook time: 30 minutes      ready in: 35 minutes

4 (4 oz.) tilapia filets
2 tsp butter
italian seasoning
garlic salt
lightly steamed broccoli, cauliflower, carrots
salt and pepper


  1. preheat oven to 375 degrees F. grease a 9×13 inch baking dish.
  2. place tilapia filets in the bottom of baking dish and dot with butter. season with italian seasoning, garlic salt and pepper. arrange vegetables around/on top of the fish and season with salt and pepper.
  3. cover the dish and bake for 25 to 30 minutes until vegetables are tender and fish flakes easily with a fork.


seth and drew were visiting cincinnati for one of drew’s golf tournaments, so i had the opportunity to cook dinner for them saturday night.

i rarely cook with any type of meat, but i really like fish and tilapia’s a pretty easy and tasty fish to cook with, so i typed “easy tilapia recipes” into the magic 8 ball known as google.com and came across this one from allrecipes.com. this was definitely a very easy dish to prepare and cook. plus it was also doubly nice that i had all the ingredients already at my fingertips. i don’t think i added enough salt which is alright; it’s better to have it not salty enough than too salty.

i didn’t use the lemon they requested, although it might’ve added a little more zest to the dish and i didn’t bother covering the dish while it was baking and the fish and vegetables turned out fine. the fish was tender and the vegetables were tasty. in the future, i think i would add a few more fish filets in there… maybe 2 or 3 more. maybe even toss in a few garlic cloves and experiment with tossing in more herbs and spices. overall, i was satisfied with the outcome of this dish.

p.s. i slowly made my way through another container of pickles and am brining a boatload of carrots. i cannot wait for the next couple of weeks to pass quickly !
