nuts for apples

apple nut cake by diane eilerman

3 eggs
1 3/4 c sugar
1 c oil
2 c flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
2 c chopped apples (~2 medium apples)
1 c chopped nuts


  1. mix first 7 ingredients well.
  2. add apples and nuts.
  3. pour into a greased pan.
  4. bake at 350 degrees for 40 minutes.

i got this recipe from gail chang when we were invited to their humble abode to hang out with their family. she made it and i liked it so much, i requested the recipe and gail gladly obliged, for which i am most grateful. (drama much? who me?)

this was incredibly easy to make and even easier to eat 😉 the cake was very moist and very good. i skipped the nuts; i could’ve added walnuts, peanuts… maybe even almonds. i also added one more golden delicious apple to the recipe… to make it more healthy. 1 cup of oil is a lot of oil especially compared to the amount of other ingredients. i poured the cup into the mix and was like, “whoa… everything’s saturated in oil.” it’s probably what made the cake so darn scrumptious.

i would use this recipe again in a heartbeat.
