pasta with tuna

April 26, 2011

4 servings        ready in 30-35 minutes

2 T olive oil
1 onion, chopped
2 garlic cloves, minced
1 can chopped tomatoes
1/2 tsp chili powder
1 tsp sugar
pasta bow ties
2 cans tuna, drained
basil leaves

  1. heat the oil in a pan, throw in the onion and cook for a couple of minutes.
  2. stir in garlic, tomatoes, chili and sugar. season with salt and pepper and bring to a boil. give it a good stir, then reduce the heat and simmer for 5 minutes.
  3. meanwhile, bring a large pan of salted water to the boil. add the pasta and cook according to packet instructions.
  4. flake the tuna into the sauce and heat through.
  5. drain pasta, return to the pan and stir in the sauce and basil leaves.
  6. serve with a generous grinding of pepper and sprinkle with parmesan cheese.

this was quick and pretty easy to make. it was also very tasty too. i’d never thought of making pasta with tuna. the tuna gave a nice taste and texture to the pasta.

this batch turned out somewhat dry because i didn’t have the tomatoes on hand, but i’m sure that if i did use the tomatoes, they would’ve made the dish more moist and even more savory.
