sweet potato casserole

prep time: 30 minutes       cook time: 1 hour

serving size: 12

4 sweet potatoes, cubed
1/2 c brown sugar
2 eggs, beaten
1/2 tsp salt
2 T butter, softened
1/2 c milk
1 tsp vanilla extract
1 tsp cinnamon
1 tsp nutmeg


  1. preheat oven to 375 degrees.
  2. scrub sweet potatoes and poke holes with a fork in each potato.
  3. wrap each one in aluminum foil and place on a cookie sheet and bake for an hour.
  4. let potatoes cool and then cube.
  5. in a medium bowl, mix together all ingredients. mix until smooth. transfer to a 9×13 inch baking dish.
  6. place baking dish in oven and bake at 375 degrees for 30 minutes or until lightly brown.

i love sweet potatoes; they are good for any occasion, not just thanksgiving and easter. and i had a hankering for some.

that seems to be the trend: i crave something, i find a good recipe for it, and then i make it. it’s so great =]

anyway, this turned out well and smelled great. my kitchen smelled like sweet potatoes and cinnamon for several days after !
