fresh spinach with ground beef curry

4 servings       prep time: 10 min.       total time: 30 min.


2 bunches spinach, washed
1 lb ground beef
3 garlic cloves, minced
1 medium onion, chopped
1 c beef broth (substitute: 1 T soy sauce, add enough water to make 1 cup)
red pepper flakes, to taste
5 slices bacon, chopped
1/2 c sour cream
1 T curry
salt and pepper


  1. saute onion and bacon until cooked. no oil necessary.
  2. add beef and cook until brown.
  3. cook for 3 minutes.
  4. add broth, red pepper flakes, sour cream, and curry.
  5. season with salt and pepper.
  6. this can be served with rice or noodles.

i was sort of improvising with this dish. i had spinach and ground beef to work with and i was in the mood for curry, so add those 3 ingredients together and you get this dish. i typed in spinach and ground beef and browsed through recipes i liked.

this is a really great dish, especially served over rice. there’s a lot of juice, so mix it in with rice and it’s really quite delicious.

this cooking/baking thing is really quite fun and adventurous =] i’m thinking of making some girl scout cookies next. now where can i get some ripe girl scouts? 😉
