cucumber salad

4 cucumbers, thinly sliced
1 small white (or red) onion, thinly sliced
1 c white vinegar 1/2 c white vinegar
1/2 c water 1/4 c water
1/2 c white sugar
1 T dried dill, or to taste


  1. toss together the cucumbers and onion in a large bowl.
  2. combine the vinegar, water and sugar in a saucepan over medium-high heat. bring to a boil and pour over the cucumber and onions.
  3. stir in dill, cover, and refrigerate until cold. this can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.


i didn’t like how sweet this marinade was, so i changed the amount of sugar from 3/4 cup to 1/2 cup and i usually like my cucumbers to be more sour than sweet, so i might add a tad more vinegar next time. this also turned out to be a lot of marinade… a soup, if you will. i think i’m going to cut the liquid in half.

i was trying to find a recipe that i used before, but no such luck. i think i may try this one next…

red onion and cucumber salad

prep time: 20 minutes     yield: 6 servings

1 red onion, julienned
3 english cucumbers, peeled and thinly sliced
2 tsp peeled, grated fresh ginger
2 cloves garlic, minced
2 T minced fresh chives
2 T rice vinegar
1/2 tsp mustard
1/4 c vegetable oil or extra virgin olive oil
pinch crushed red pepper flakes
freshly ground black pepper


  1. place onions in a large bowl; set aside.
  2. in a colander, lightly salt the cucumbers and let drain for about 10 minutes.
  3. meanwhile, whisk together ginger, garlic, chives, and vinegar in a small bowl. while whisking, slowly add oil and whisk until smooth. add the pepper flakes and season to taste with salt and pepper.
  4. add the cucumbers to the onions and toss well. add dressing and toss well. adjust the seasonings. refrigerate for at least 30 minutes or up to 24 hours before serving. serve chilled.

thai cucumber and radish salad

1 english cucumber
1 bunch radishes, cleaned
1 T olive oil
1 pinch sugar
1/2 c vinegar (any type)
2 cloves of garlic, minced
1 tsp crushed red pepper flakes
salt and pepper to taste

slice cucumber and radishes in very thin rings. (mandolin recommended.) combine olive oil, sugar, vinegar, garlic, and crushed red pepper flakes in a bowl and add cucumber and radishes. season with salt and pepper. cover and serve chilled.


i can’t wait to try the radish and cucumber one =]
||update|| the radish and cucumber salad is so very tasty ! i love how crunchy the radishes are. i don’t think lance liked the combination of smells – garlic and vinegar. i honestly think i ate the entire salad myself, which is fine by me ;D
